The season for spiders is usually late April through June, when they are in the process of building their webs and building their dens.
During that time, they are active, eating prey and exploring the world.
Rice, on the other hand, is the perfect preparation for them, and the first thing that comes to mind when you hear the word ‘rice’ is rice.

Here’s how to make the perfect meal of roasted rice: 2 tablespoons extra virgin olive oil (or vegetable oil) 4 cloves garlic, peeled and finely chopped 3 tablespoons rice vinegar 1/2 teaspoon ground coriander 1 teaspoon cumin seeds 1 teaspoon ground cinnamon 1 teaspoon chili powder 1/4 teaspoon salt 1/8 teaspoon ground turmeric 1/16 teaspoon ground nutmeg 2 tablespoons cooked rice, cooked as described above, drained and rinsed thoroughly (we used this recipe for our Rice and Spiders and Rice and Cornbread.

Combine all ingredients in a small saucepan and bring to a boil.
Remove from heat and allow to cool.
Add 1 teaspoon of the oil and stir to combine.
Add the garlic and saute for a minute or two.
Add in the rice vinegar and stir again until it’s thoroughly combined.
Add a bit more water if needed.
Add salt, cumin and cinnamon and mix well.
If using, add the coriand chili powder and turmeric and mix until well combined.
Once all the ingredients are thoroughly combined, pour the mixture into a baking dish or large casserole dish, and bake at 350° for 30 minutes.
Serve with a drizzle of olive oil, some extra rice and lots of crusty bread.

It’s also great for making a quick breakfast and serving as an appetizer.
Recipe for Spiders: To prepare the Spiders for this tutorial, you will need to make some extra time for this step.
The recipe for roasting chicken is in the Roasted Chicken and Roasted Cornbread recipe.
To roast a chicken, cook the chicken and set aside.
Roast the chicken in a shallow pan of a 400°F oven for about 8 minutes.
You can also use a nonstick skillet and roast the chicken with the lid on, but we like to roast it on the stove top for extra crispiness.
Add some chicken stock and a splash of water if necessary.
The spiders should be ready when the chicken is cooked and golden brown.
Season with salt and pepper and serve with a nice drizzle or drizzle with some rice and crusty crumbs.
Recipe Tips: Roasting chicken does require more time, but it’s not necessary if you don’t want to spend the time.
If the chicken you buy has been roasting at a low temperature for a long time, it’s a great way to roast and make it taste fresh.
